- 2 pounds ripe tomatoes, coarsely chopped
- 1 cup brown sugar
- 1 tablespoon freshly squeezed lemon juice
- 2 tablespoons apple cider vinegar
- 1 tablespoon fresh grated or minced ginger
- ¼ teaspoon ground cinnamon
- ⅛ teaspoon ground cloves
- 1 teaspoon salt
- 1 jalapeño or ¼ teaspoon red pepper flakes
Instructions
- Wash and core tomatoes, then coarsely chop into ½-inch pieces.
- Add tomatoes to a heavy-bottomed pot with brown sugar, salt, ginger, cinnamon, cloves, jalapeño, vinegar, and lemon juice.
- Bring to a rolling boil over medium-high heat, stirring occasionally.
- Reduce heat to low and simmer uncovered 75–90 minutes, stirring every 15–20 minutes until thick and jammy.
- Test by drawing a spoon across the bottom; mixture should not flow back immediately.
- Adjust seasoning, cool slightly, and transfer to clean jars.
Notes
For a unique twist, try different vinegars, adjust heat level, or add herbs like thyme or oregano. Store in sterilized jars for freshness.
