Ingredients

  • 2 pounds ripe tomatoes, coarsely chopped
  • 1 cup brown sugar
  • 1 tablespoon freshly squeezed lemon juice
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon fresh grated or minced ginger
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon ground cloves
  • 1 teaspoon salt
  • 1 jalapeño or ¼ teaspoon red pepper flakes

Instructions

  1. Wash and core tomatoes, then coarsely chop into ½-inch pieces.
  2. Add tomatoes to a heavy-bottomed pot with brown sugar, salt, ginger, cinnamon, cloves, jalapeño, vinegar, and lemon juice.
  3. Bring to a rolling boil over medium-high heat, stirring occasionally.
  4. Reduce heat to low and simmer uncovered 75–90 minutes, stirring every 15–20 minutes until thick and jammy.
  5. Test by drawing a spoon across the bottom; mixture should not flow back immediately.
  6. Adjust seasoning, cool slightly, and transfer to clean jars.

Notes

For a unique twist, try different vinegars, adjust heat level, or add herbs like thyme or oregano. Store in sterilized jars for freshness.
