Ingredients

  • ¼ cup extra virgin olive oil
  • ½ cup white sugar
  • 4 cups onions, coarsely chopped (Vidalia recommended)
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ cup red wine vinegar

Instructions

  1. Heat olive oil in a heavy skillet over medium heat.
  2. Stir in sugar and cook until light caramel color, about 10 minutes.
  3. Add onions, salt, and pepper. Reduce heat to medium-low and cook, stirring, until onions caramelize (about 15 minutes).
  4. Pour in red wine vinegar and simmer 30 minutes, stirring occasionally, until jammy consistency is reached.
  5. Remove from heat, cool to room temperature, and store in jars.

Notes

Vidalia onions create the best balance of sweetness, but yellow, red, or white onions can be used. Vinegar can be swapped for balsamic for a richer flavor.
