This homemade Sea Buckthorn Jam is a vibrant, antioxidant-packed preserve made in under 90 minutes. With its tangy citrus-like flavor and nutrient-rich benefits, it’s a versatile spread perfect for toast, yogurt, desserts, or even savory pairings like cheese and roasted meats.

- 8 cups sea buckthorn berries, fresh or frozen
- 2 cups water
- 4 cups sugar (or substitute with coconut sugar, honey, or natural sweetener)
- 1 box powdered pectin (1.75 oz) or 6 Tbsp bulk pectin
Instructions
- Wash sea buckthorn berries thoroughly, removing stems and leaves. If frozen, thaw slightly.
- In a large pot, add berries and 2 cups water. Bring to a boil over medium heat and mash with a potato masher for 5–10 minutes.
- Strain mixture through a jelly bag, cheesecloth, or fine mesh strainer to remove seeds while keeping pulp or juice.
- Return strained juice/pulp to pot, stir in pectin, and bring to a rolling boil for 1 minute.
- Add sugar, stir until dissolved, and return to a hard boil for 1 minute until glossy.
- Ladle hot jam into sterilized jars, leaving 1/4-inch headspace. Wipe rims, seal with lids, and process in boiling water canner for 10 minutes (15 if above 6,000 ft).
- Cool jars on a rack and listen for the sealing “pop.”
Notes
Store sealed jars in a cool, dark place for up to 1 year. Refrigerate after opening and consume within 3 weeks.
