  • 1 & 3/4 ounce (1 box) SURE-JELL fruit pectin

Instructions

  2. In a medium saucepan, combine peaches, sugar, lemon juice, vanilla extract, and water. Stir well.
  3. Bring to a boil over medium-high heat, stirring constantly. Boil for 3 minutes.
  4. Sprinkle in the pectin while stirring. Boil for 1 more minute until dissolved.
  5. Reduce heat and mash the mixture using a potato masher or immersion blender to your desired consistency.
  6. Ladle hot jam into sterilized jars, leaving 1/2-inch headspace. Wipe rims and seal.
  7. Cool jars at room temperature for 1 hour, then refrigerate overnight to set.

Notes
