- 3 cups peeled, finely diced fresh ripe peaches
- 1 & 1/4 cups granulated sugar
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract
- 1/2 cup water
- 1 & 3/4 ounce (1 box) SURE-JELL fruit pectin
Instructions
- Peel and finely dice 3 cups of ripe peaches. Blanch in boiling water for easier peeling if needed.
- In a medium saucepan, combine peaches, sugar, lemon juice, vanilla extract, and water. Stir well.
- Bring to a boil over medium-high heat, stirring constantly. Boil for 3 minutes.
- Sprinkle in the pectin while stirring. Boil for 1 more minute until dissolved.
- Reduce heat and mash the mixture using a potato masher or immersion blender to your desired consistency.
- Ladle hot jam into sterilized jars, leaving 1/2-inch headspace. Wipe rims and seal.
- Cool jars at room temperature for 1 hour, then refrigerate overnight to set.
Notes
Use fragrant, just-ripe peaches for the best flavor. For longer storage, process sealed jars in a boiling water bath for 10 minutes.
