Description

Ingredients

  • 4 cups fresh salmonberries, cleaned and stems removed
  • 3 cups granulated sugar (or 2½ cups coconut sugar)
  • ½ teaspoon ground cinnamon
  • 2 tablespoons liquid pectin (or 1 packet powdered pectin)

Instructions

  1. Thoroughly clean salmonberries and sterilize jars.
  2. Gently mash berries, leaving some chunks for texture.
  3. In a dutch oven, combine mashed berries, pectin, and cinnamon. Bring to a rolling boil.
  4. Gradually add sugar while stirring. Return to a hard boil for 60 seconds.
  5. Test doneness on a chilled plate. Ladle hot jam into sterilized jars, leaving ¼-inch headspace.
  6. Process jars in boiling water bath for 10 minutes at sea level (add 1 minute per 1,000 feet elevation).

Notes

Avoid overcooking the jam, as salmonberries are delicate and can lose flavor and color. Always test for proper gel formation using the cold plate method.
