Description

This homemade apricot jam recipe transforms 1kg of fresh apricots into golden, spreadable perfection in just 90 minutes. With only three simple ingredients, you get a mildly sweet preserve with a pleasant tartness – perfect for toast, baked goods, or savory pairings.


Ingredients

  • 1kg Fresh Apricots (rinsed, dried, stones removed)
  • 1kg Chelsea Jam Setting Sugar
  • 1 Knob of Butter (10g) or Olivani Spread

Instructions

  1. Prepare apricots by removing stones and crushing or blending to desired texture.
  2. Place apricots in a large heavy-based saucepan and gradually add jam setting sugar while stirring.
  3. Add butter and increase heat to medium-high. Bring mixture to a full rolling boil.
  4. Boil for exactly 4 minutes to activate pectin.
  5. Remove from heat, skim foam, and test for set using chilled plate method.
  6. Bottle immediately into sterilized jars, leaving ¼ inch headspace.

Notes

This recipe makes approximately 4 medium jars. Always use sterilized jars and perform the chilled plate test for proper set.
