- 4 fresh oranges – peeled, seeds and pith removed
- 1 grapefruit – peeled, seeds and pith removed
- 1¼ cups white sugar, divided (¼ cup for initial cooking, 1 cup later)
- 3 tablespoons low-sugar pectin
- 1 cup fresh orange juice
- 1 cup water
- ¾ cup honey
Instructions
- Pulse prepared oranges and grapefruit 8 times in a food processor.
- Transfer to heavy-bottomed pot, add ¼ cup sugar, pectin, orange juice, and water.
- Bring to a boil, then simmer 8 minutes.
- Stir in honey and remaining sugar, boil vigorously for 1 minute.
- Sterilize jars and lids in boiling water for 5 minutes.
- Pack hot jam into jars, leaving ¼-inch headspace, remove air bubbles, and wipe rims.
- Process jars in boiling water bath for 10 minutes (below 6,000 feet elevation).
Notes
Honey is sweeter than sugar, so start with less and adjust as needed. Avoid excessive pith to prevent bitterness and always test set with the cold plate method.
