- 7 cups sugar

Instructions
- Wash black raspberries thoroughly, then pat dry. Sterilize jars in boiling water for 10 minutes.
- Crush berries and stir in lemon juice. For seedless jam, strain mixture through a sieve.
- Stir in pectin according to package instructions, then add sugar gradually, mixing well.
- Simmer mixture over medium heat, stirring frequently. Use a candy thermometer to reach 220°F (104°C).
- Remove from heat. Pour hot jam into sterilized jars, leaving 1/4-inch headspace.
- Seal jars with lids and process in a boiling water bath for 10 minutes.

Avoid overcooking—the jam should be removed from heat once it reaches 220°F. Always sterilize jars properly to prevent spoilage. For a vegan option, skip butter and use agar-agar instead of pectin.
